Montpalais

This wine has a great aging potential and is made of the best grapes of the “Montpalais” plot. I wanted to get the maximum of this terroir on a great vintage by pushing the breeding at 24 months. Each step was carried out delicately by gravity and without filtration. The wood origin of the wood and the type of heating of the barrels were carefully thought out in collaboration with my cooper.
